An Easy Walnut Banana Bread Recipe

Banana Bread is one of those versatile ‘cake’ recipes that can be served with a cuppa, eaten for breakfast or jazzed up with ice cream for dessert. It’s also great for some sneaky midnight snacking after you’re done watching ‘Mad Men’ at the 11 pm slot. Maybe Betty Draper kept some at hand in her kitchen too?

A recipe like this deserves to be easy, right? I hear you! My version of Banana Bread is so easy to whip up that all you need is a spatula. Yes, that’s right, no electric beaters, no fancy stand mixers required. There’s sweet golden honey that gets gently stirred with olive oil and then we just keep stirring and adding till we have a lovely, moist Banana Bread. Toasted walnuts add a wholesome crunch when they get folded right at the end. I might have toasted a little bit extra to chomp on while I was waiting for the oven buzzer to go off. Might have, maybe… Have I confessed too much today?

An Easy Walnut Banana Bread Recipe
  1. Toast the walnuts in a pre-heated oven for 10 minutes at 150 degrees Celsius. Chop them up once they have cooled.
  2. Pre- heat the oven to 170 degrees Celsius for baking. Grease and dust with flour a 9”x5”x3” loaf pan.
  3. In a bowl, stir together the two different flours, baking powder, soda, salt and cinnamon.
  4. In a larger bowl, pour the oil, add the honey and stir it together till combined.
  5. Add the beaten eggs and mix till combined.
  6. Slowly add the mashed bananas in two batches and the vanilla, stir it together gently.
  7. Dry ingredients need to be added in two batches, folded gently with each addition. Fold in the chopped walnuts.
  8. Pour the batter into the prepared loaf pan and bake for about 30 - 40 minutes or until a skewer inserted in the centre of the banana bread comes out clean.
Recipe Notes

P.S. – Wheat is extra glutinous and takes longer to bake. The temperature of 170 degrees Celsius (instead of the usual 180 degrees) ensures thorough baking without burning.
