Pomegranate Soda

The onset of summer usually throws my eating habits totally off- gear. I know that it’s technically spring, but save the technicalities please, it’s already crossed 35 degrees(C) here! For the last couple of summers, I’ve found that my eating tends to wane during the day and I tend to load up on packaged sugary drinks. By the time the blazing sun decides to take cover, my poor tummy would growl from being neglected, but the sugary drinks would kick in by then, making it impossible for me to eat anything. But this year, I’m pretty determined to have a few recipes up my sleeve that are a whole lot nicer to, well, me. Enter: POMEGRANATE SODA!

A major, major (in my head I’m totally adding another “major”) plus for this drink is that it has no added sugar and relies entirely on the sweetness of the pomegranate!
I’ve used fresh pomegranate juice here, which is roughly the seeds of one pomegranate blended in the small jar of my mixer and then just strained out the seeds using (hold your breath) a tea strainer! If you’re one for keeping time, this takes less than a minute. It’s just pomegranate seeds, some ice cubes, juice and club soda. Stir and drink up!

But, unlike the Cucumber Cooler recipe I’d shared last week, I wouldn’t suggest mixing a large batch of Pomegranate Soda and keeping it in the refrigerator. You can keep the juice ready though, and then mix together as many servings as you like. I know, you’re thinking, “that’s kinda obvious Ms.T, there’s soda that will go flat!” But sometimes, I just need to type it out, and you understand that, which is why we have this recipe sharing thing going week after week. And since I’m closing in on a whole year of me taking pictures of food and rambling on about recipes, I need to tell you that I totally appreciate you! Now, as Rachel Khoo always signs off, Bon Weekend!
