Apple Pie Made Easy
“As easy as a pie!” How often have you heard that? Any baker will tell you that the only thing “easy” about pie is eating it!
For the Pie:
  • 2.5cups flour(half all purpose and half whole wheat)
  • 1/2cup icing sugar
  • Pinch salt
  • 2 buttersticks of , cubed
  • Iced Water(1/2 cup kept ready but used as per judgement)
  • 1 eggbeaten ( wash)
For the Filling:
  • 3 apples, peeled , cored & chopped
  • 2 unsalted butterTBSs
  • 1/4cup castor sugar
  • 1/4cup brown sugarsoft (plus extra for dusting lattice)
  • 2teaspoons cinnamon(plus extra for dusting lattice)
  1. Pre-heat the oven to 220 degrees Celsius.
  2. Cube the butter and refrigerate it. Measure the flour, sugar and salt into the bowl of a food processor. Add the butter and pulse it till it resembles breadcrumbs / wet sand.
  3. Bring the crumbs together adding a few tablespoons of iced water at a time until it is cohesive and can be kneaded into a dough. Cut the dough into two round discs and wrap tightly in cling film and put it in the freezer for 20 minutes.
  4. Melt 2 TBS of butter in a pan and toss in the chopped apples, allowing them to cook for 5 minutes. Add the castor sugar, combine and let them cook till they are tender. Turn off the gas, let the apples cool slightly and toss in the soft brown sugar and cinnamon and combine well.
  5. Meanwhile, roll half the pie dough over a surface dusted with flour and sprinkle some flour on the dough as you roll it too. Transfer it to a greased pie dish and trim the edges. *I didn’t crimp the edges, but feel free to do so. And then:
  6. Now add the apples:
  7. We made the (see link below) the lattice and brushed it with egg wash & sprinkled it with a mixture of soft brown sugar and cinnamon. Bake the pie in the oven for 30 minutes (constantly keeping an eye on it). After letting it cool completely, we were ready to eat!
