  1. Heat the oil in a large skillet and the chopped up bacon pieces. Just as they begin to brown, add the chopped shallot and cook until soft. Simultaneously, cook the pasta in a large saucepan of salted, boiling water until al dente.
  2. Set aside 1 cup of pasta cooking water and drain the pasta when cooked. Add about 3/4th cup of the pasta cooking water & miso paste to the skillet and dissolve the miso completely by bringing the liquid to a simmer. Add the drained pasta and toss to coat it in the sauce. Sprinkle with pepper & toss the parsley through the pasta and taste to check if you’d like to add salt. I didn’t need any. Garnish with some extra parsley. Serve immediately.
