Fudgy White Chocolate Chip Brownies

  1. Pre-heat the oven to 180 degrees Celsius. Line the cake pan with greased parchment paper.
  2. Bring water to a simmer in a pan. Remove from heat. In a heatproof bowl, combine the butter & dark chocolate chips. Gently lower it over the simmering water and stir for it to melt together. Allow it to cool.
  3. In a separate bowl, whisk together the eggs and sugar and beat in the cooled chocolate – butter mixture. Fold in the flour followed by the white chocolate chips. Pour the mixture into the parchment lined cake pan & smooth the surface. Place the cake on a baking tray in the pre-heated oven and bake for roughly 30. The mixture should be a little soft in the centre.
